Necessity is the mother of Invention...
I invented this recipe when one fine day i got up late and had only 30 minutes to catch the last bus to the office. I avoid eating outside so i though of preparing something for the lunch and i only had a max of 15 minutes to prepare it. And that is when this recipe was invented. And since that day this has become my favorite lunch and it always serves it's purpose. It's quick to prepare , it's super healthy and is tasty too. I am not sure of your taste buds but why not give it a try :)...
Here is what you would need-
1. One finely chopped onion
2. One finely chopped garlic clove
3. 4-5 chopped green chillies.
4. 1/2 chopped tomato
5. 10-12 crushed peanuts
6. Chopped cilantro
7. 4 Egg whites
8. 100 gm of Oats
9. 1 table spoon olive oil
10. 1 teaspoon Vegetable oil
Since i am cutting down i use only egg whites.If you are bulking up you can add 1 egg yolk too. I prefer the "quick in a minute" Quaker Oat for this recipe.
We want to make this recipe healthy so use minimum oil and try using a good non-stick pan.
Preparation-
Add 1tsp of vegetable oil,onions,garlic,tomato,crushed peanuts and green chillies in the pan and saute on medium flame for 3-4 minutes. Add the eggs now, along with salt/pepper and saute again for 5 minutes strirring in between.Now add the oats and heat for a furthur 2-3 minutes stirring regularly.Add the cilantro and heat for a furthur 1 minute. Turn off the heat now, mix the olive oil and serve.
Eureka !!!!
Now pack your lunch and rush to the bus..You only have a minute to catch your last bus :).. Pack on some green leafy salad too..Remember no lunch is complete without green vegetables...
